Dried fruit and pistachio quinoa porridge
Ingredients:
2/3 cup quinoa flakes
1 cup milk 1 cup water
1/2 cup mixed dried fruit chopped into small pieces
1/3 cup dried dates
1 1/2 tablespoons honey
1/3 cup pistachio kernels, coarsely chopped
1 banana diced
Greek yoghurt (optional)
Directions:
Combine the water and milk in a saucepan and bring to the boil. Add the Quinoa flakes, reduce the heat to low and cook for around 90 seconds or until all moisture is absorbed Stir in dried fruit and dates. Serve in bowls while still warm and top with the banana, honey and pistachio nuts Finish with a dollop of Greek yoghurt or a little more milk.
