Stir fry with Lup Chong
3 small carrots
1 large brown onion
1 large zucchini
1 bunch large spinach leaves/Kale
½ bag of button mushrooms
100 gr water chestnuts
1 red capsicum
1 yellow capsicum
1 clove garlic chopped
1 inch piece fresh Ginger grated
1 small pack noodles
2 Lup chong sausages finely sliced

1/3 cup hoi sin sauce
4 tbs soy sauce
4 tbs Chinese cooking wine
4 tbs oyster sauce
Juice of 1 lime

Slice the vegetables thinly so they all are roughly the same size.
Add 2 tbls of oil to a wok and heat on high heat until smoking.
Add the Garlic and the ginger and cook for a few seconds before adding the vegetables. Cook for a few minutes until the veg starts to soften.
Combine the Hoi sin, soy, cooking wine, oyster sauce and lime juice and add to the wok.
Then add the spinach/kale and the noodles and continue to cook on high heat for a few minutes before serving.
